Wenn wir bei uns in der Kaffeerösterei Kirmse über das perfekte Aroma philosophieren, dann sprechen wir meistens über die Herkunft der Bohnen, den Röstgrad und die Präzision der Mahlung. Dabei vergessen wir oft den wichtigsten Akteur, der rund 98 % des Filterkaffees ausmacht: das Wasser. Aber nicht irgendein Wasser. Für uns hier im Bayerischen Wald gibt es dafür nur einen Namen, der für Reinheit und Qualität steht: waldwasser. Zusammen mit einem Teil meines Teams habe ich mich auf eine Reise begeben, die uns nicht in die fernen Hochlagen Äthiopiens oder zu den Plantagen Kolumbiens führte. Das Ziel lag viel näher, direkt vor unserer Haustür im Herzen des Bayerischen Waldes. Als Nationalpark-Partner und leidenschaftliche Genusshandwerker wollten wir dem Ursprung unserer Qualität auf den Grund gehen.
