Santana Trade was founded by Kenny Soto Santana, who grew up in Germany from the age of seven and wanted to help his extended family in the Dominican Republic. But Santana Trade also deals in chocolate. His huge family has been cultivating cocoa and coffee since 1883, maintaining a great tradition. Kenny Soto Santana has taken on direct marketing to the EU & worldwide. The goal is to be able to oversee and control the entire value chain and distribution. Producing cocoa and roasting coffee is one thing needed for truly excellent chocolate-coated coffee beans. Beyond that, you also need a chocolatier who processes the cocoa bean and extracts from this raw material what can be made from a cocoa bean: a chocolate where you can taste the mild, rounded cocoa flavour. Edelmond raw chocolate is produced in a particularly gentle way. The organic cocoa beans are not roasted; they are processed at a maximum of 46°C, corresponding to the natural tropical climate prevailing in the growing regions. By conching for over 24 hours, the bitter substances in the cocoa dissipate. This is why Edelmond chocolate does not taste bitter compared to raw chocolates from other manufacturers. Components such as vitamins, flavonoids, and theobromine, which have a positive effect on health, are largely preserved. Flavonoids counteract oxidative stress; theobromine improves blood lipid levels, strengthens the immune system, improves concentration, and has a mood-enhancing and stimulating effect.
