Imagine you're drinking your cup of coffee – and thereby protecting the lynx in the Bavarian Forest and empowering women in
Guatemala. Sounds good? Kaffee de Luchs makes exactly that possible.
This isn't just about caffeine and taste. It's about responsibility, nature, people, and enjoyment that goes deeper. With every cup of Kaffee de Luchs, you help protect the lynx in the Bavarian Forest National Park and support women in Guatemala in forging their own path.
You connect your everyday life with a movement that preserves nature and strengthens communities. Sip by sip, with a
coffee that benefits not only you but also the world.
The Lynx Project in the Bavarian Forest National Park
The lynx is a silent guardian of our forests. Its paws barely audibly touch the ground, its gaze remains
vigilant as it roams through the forests of the Bavarian Forest. But even if it can hide well, it needs our help to survive in its home.
With your Kaffee de Luchs, you actively support the protection of this fascinating animal. From every pack sold, €1 flows directly into lynx monitoring and protection projects in the Bavarian Forest National Park. This way, you help protect the lynx, document its tracks, and ensure its long-term preservation in our forests.
Why is this so important? Because as a returnee to our forests, the lynx is not only fascinating but also plays an important role in the natural balance. It ensures stable wildlife populations, healthy forests, and is a symbol of successful nature conservation. With every cup of Kaffee de Luchs, you choose to protect nature and biodiversity on your doorstep and worldwide – while enjoying your moment of indulgence.
Kaffeerösterei Kirmse works closely with the Bavarian Forest National Park to
ensure the long-term protection of the lynx. But we also advocate for nature and people beyond our national borders: Together with the Montecristo National Park in El Salvador, we support the
sustainable protection of this unique natural area – the origin of our National Park Indulgence Coffee from El Salvador. These projects are close to our hearts, and we regularly support them through direct contact and on-site assistance.
The Cafecita Coffee Project: Café de Mujeres
In the highlands of Guatemala, around the village of Lampocoy, a coffee grows that is far more than just a beverage. Here,
57 women have consciously decided to forge their own path – independent of men, on their own small plantations. In a world where coffee cultivation is mostly
in male hands, they have united to produce their own specialty coffee: the Café de Mujeres – Coffee by Women.
This special women's coffee originated from the Cafecita project, which for many years
has stood for fair trade, transparency, and respect towards the people in Lampocoy. The coffee
is cultivated using small-scale mixed farming and organic-biological circular economy practices –
traditionally, sustainably, and in harmony with nature.
“The quality of life and the dignity of people are a very important and indispensable part of the quality
of our coffee,” says Cordts, initiator of Cafecita. Precisely this attitude also shapes the Café de Mujeres.
The women take responsibility for their fields, care for the coffee trees with dedication, and harvest the cherries by
hand – all on their own land.
Cafecita organizes the processing and direct export: Without speculation,
without intermediaries, directly to roasteries in Europe. “We control the quality and
cultivation methods and pay a price that is at least 15% above the world market level,” Cordts explains further. This
enables projects such as schools, health posts, computer centers, or reforestation to be realized in the region – tangible aid that creates perspectives,
prevents causes of migration, and protects the climate.
Honesty and absolute transparency are the foundation of Cafecita. All figures,
quality analyses, and residue reports are regularly published – open and traceable. For you, this means:
You know exactly what you're drinking – and whom you are supporting with it.
With your Kaffee de Luchs, you are part of this movement: You empower women, support genuine local development,
and contribute to ensuring that coffee cultivation can continue in harmony with people and nature in the future. Learn more

The Nature Around Lampocoy – Home of Women's Coffee
Lampocoy is nestled in a green mountainous landscape, crisscrossed by small paths, shaded groves, and fertile
soils. In this remote region in eastern Guatemala, time sometimes seems to stand still – yet life pulsates here
in every leaf, every drop of rain, every morning mist that settles over the slopes.
The region is characterized by volcanic rock, which makes the soils particularly nutrient-rich –
ideal conditions for cultivating high-quality Arabica beans. The coffee grows here in mixed cultivation with
banana plants, orange trees, avocados, and shade plants that stabilize the microclimate and promote
biodiversity.
Here, coffee cultivation is not a monoculture system, but part of an ecological
balance nurtured by the people – often over generations. Water sources,
hillside terraces, traditional cultivation methods: All of this contributes to the fact that the women's coffee from Lampocoy is not only
convincing in taste but also produced in an ecologically responsible manner.
🌱 No use of chemicals
🌳 No monoculture
💧 Instead, water sources, terrace farming, and intergenerational knowledge
For the 57 women coffee farmers of Café de Mujeres, this landscape is more than a workplace – it
is home, livelihood, and future. Their work in harmony with nature shows: Sustainability begins where respect for
the earth meets lived experience. When you drink a cup of Kaffee de Luchs, you not only enjoy the result of this
connection to nature – you also protect it.
The Taste of Café de Mujeres
When you first experience Café de Mujeres in your cup, you immediately notice: This is no ordinary coffee. There's a
clarity, a delicate balance – and an aroma that tells stories. Of volcanic soils, of high altitudes, of the rhythm of the day in Lampocoy.
The coffee is hand-picked, washed processed, and then dried under the sun of
Guatemala – carefully, gently, and with a trained eye for every bean. This traditional, precise processing preserves the complex aromas and brings out their full depth.
In taste, a harmonious cup with notes of dark chocolate, caramel
and pecan awaits you. A pleasant sweetness combines with a clear, lively
acidity that gives the coffee freshness without being obtrusive. The body is soft, round
and velvety, the finish is long and subtle – a coffee that doesn't push itself to the forefront
but delights with gentle notes.
Every roast at Kaffeerösterei Kirmse is tailored to the unique characteristics of this bean. The goal
is not just a balanced flavor profile – but also to make the origin, the women's work, and the soul
of this coffee palpable. With Café de Mujeres, you choose not only quality in the cup,
but a coffee with character, conviction, and origin. One that makes an impact – on you and far beyond.
What Your Coffee Achieves – Here and on the Other Side of the World
With your Kaffee de Luchs, you do more than just enjoy a good coffee – you become part of two
powerful movements:
✓ One that empowers women in Guatemala, enables them to have a fair livelihood, and makes them
visible.
✓ And one that protects the lynx in the Bavarian Forest – an animal that, like no other, stands
for wilderness, freedom, and the balance of our nature.
From every pack sold, €1 flows directly into the lynx project of the Bavarian Forest National Park.
This helps finance monitoring and protection measures – so that the lynx can remain in our forests.
At the same time, with Café de Mujeres, you support women who produce their coffee independently and
autonomously, accompanied by the social direct import project Cafecita.
So you're not just drinking any coffee. You're drinking a specialty coffee from an organic
circular economy, directly traded, fairly paid, transparently processed – and with impact. For the
people. For the animals. For the planet. Conscious enjoyment begins with the decision of what you buy.
With Kaffee de Luchs, you choose taste with conviction – and a world where
appreciation matters more than volume.
Specialty coffee – also known as Specialty Coffee – stands for the highest quality: hand-picked,
single-origin, gently processed, and with an excellent flavor profile. According to the Specialty Coffee Association
(SCA), only coffees with at least 80 out of 100 points belong to this category. Learn more in our

Coffee from the Dominican Republic - Directly Traded and Sustainably Cultivated
Our Dominican coffee from Kaffeerösterei Kirmse is guaranteed to be the highest quality coffee from the Dominican Republic and one of the best coffees in the world. Coffee roaster Jens Kirmse himself traveled to the Soto Santana families' coffee plantations in the north of the Dominican Republic for the coffee harvest and is enthusiastic and convinced by the quality and transparency surrounding the coffee product and the Santana Trading Company. With Kenny Santana, he explored the coffee and cocoa plantations of the Soto and Santana families in autumn 2015, picked ripe coffee cherries with the coffee farmers, accompanied the wet processing of the coffee and its drying in the Caribbean sun, and got to know the country and its people with him. Kenny Santana grew up in Germany and lives here most of the time.
However, he also has a large family based on the dream island – he regularly visits his 12 aunts and uncles, his grandmother, and the rest of the family in the Dominican Republic. It was also Kenny Soto Santana who took charge of coffee distribution and began to open up new sales markets and direct distribution channels to Germany. Since 1883, the Santana family has been involved in agriculture for four generations, cultivating coffee and cocoa.
Coffee from the Dominican Republic - The Highland Coffee
The journey of coffee roaster Jens Kirmse and Kenny Santana begins in the capital of the Dominican Republic, Santo Domingo. Founded by Christopher Columbus in 1498, the metropolis is now home to 3 million people. They set off by car to the province of San José de Ocoa, into the highlands of the Dominican Republic. The drive leads through wild nature, over unpaved roads into the mountains of the tropical forests. After an hour's drive through the Caribbean jungle, they reach their first destination: Finca Don Juan. The term "coffee plantation" might suggest that the coffee trees were planted here side by side. But that's not the case: nestled in lush, natural vegetation, the coffee trees grow here at altitudes of 900m - 1200m on the sun-drenched slopes of the Dominican mountain landscape. The vegetation provides the coffee plants with everything they need to thrive: optimal climatic conditions and nutrient-rich, pure soil, but also shade. Juan Guerrero Soto, manager of the Finca, explains what makes the cultivation and the coffee from the Dominican Republic by the Soto Santana families special: "The organic cultivation of coffee is very important to us. The coffee is carefully harvested in pristine nature. The use of pesticides can and will be consciously avoided to guarantee you the highest quality coffee and to protect our environment, and thus us humans who live in it."
Directly from the Farmer and with Social Commitment
The coffee from the Dominican Republic is guaranteed to be directly traded and free from any chemicals – an excellent, gently cultivated coffee in harmony with nature. Two families of the larger Soto Santana family are dedicated to coffee cultivation, and 20 families manage the cocoa plantations. They work daily with the goal of producing first-class quality green coffee and rely on traditional production methods. The families are knowledgeable about coffee cultivation and the coffee business – by tradition. In the past, due to high demand and the excellent, unique quality of their coffee, the family business gained a foothold in the domestic market, opening its own coffee house in 1905 and expanding rapidly. However, in the 1970s, coffee prices dropped, and coffee exports collapsed. Like many coffee farmers around the equator, the Soto Santana families suffered immensely under the pressure of the large coffee industry. Innovation in coffee cultivation and production came through a successful generational change within the family – bringing new life into the family business. The new generation has successfully managed to realize modern, fair coffee trade and focuses on "Direct Trade." Through "Direct Trade," the long-awaited mountain road could finally be built. Previously, most of the coffee beans from the 97-hectare Finca Don Juan coffee plantation had to be transported into the valley by donkey. Thanks to direct coffee trade, it is now finally possible for the coffee farmers to live with dignity from coffee cultivation and earn a decent income, for which their fathers and grandfathers already worked.
Improvement of Coffee, Infrastructure, and Healthcare
These are the stated goals of the Soto Santana families: Coffee and Cocoa: The improvement and refinement of products in cultivation and processing. Infrastructure: "Direct Trade" made it possible to open up new paths – the mountain road was built, opening new routes, including distribution channels. Healthcare System: There is much to do – the local infirmary urgently needs a complete renovation; patient treatment is currently very limited. Financial Security: Fair remuneration for coffee farmers, for a secure future, also for the next generations. It is important for the coffee farmers in achieving this not to rely on donations, but to bring it about themselves, from the financial opportunities they gain through direct trade. Kaffeerösterei Kirmse in Zwiesel, or rather coffee roaster Jens Kirmse, sources coffee from the Dominican Republic directly from the Santana Trading Company without intermediaries. The connection to Kenny Santana and the Dominican Republic has remained beyond the journey. The goal of the Santana Trading Company is to bring a touch of Caribbean flair with exceptional and aromatic coffees to Germany for connoisseurs. You too can support the coffee farmers in San José de Ocoa by purchasing "Dominican Republic" coffee from Kaffeerösterei Kirmse in Zwiesel. In doing so, you can contribute to enabling 672 coffee farmers and their families to live the life they deserve.
The Certification of "Dominican Republic" Coffee
The "Dominican Republic" coffee bears the "Direct Trade" certification. It meets the highest quality standards and impresses with its unique taste. Although it would certainly deserve further certifications, these are associated with high costs. Trust the word of Jens Kirmse:„This coffee is the best coffee from the Dominican Republic and one of the best coffees in the world. 'Direct Trade' stands for direct, transparent trade and fair partnerships with the producers.“
Taste of Coffee from the Dominican Republic
The taste of coffee from the Dominican Republic is like the island itself: the coffee with Caribbean flair impresses with its exceptional aromas. Originating from the highlands of the jungle, this coffee convinces with an elegant mildness, low acidity, and its chocolatey note.
Experience the Coffee Journey to the Dominican Republic Yourself
Experience, like coffee roaster Jens Kirmse, how coffee from the Dominican Republic is produced. Visit Finca Don Juan and see on-site the dreamlike enchanted forest where your coffee thrives, and participate in the coffee harvest. Combine your excursion with a trip into the Dominican jungle, discover the wild nature and waterfalls in the exotic hinterland of Ocoa. Taste the sweet nectar of the cocoa fruit on the Soto Santana families' coffee plantation. Visit the production facilities and see how coffee and cocoa are traditionally processed. You can learn about sights using a travel guide. Kenny Santana will show you the Dominican Republic far away from mass tourism. Get to know the country and its people, as well as the Soto & Santana families. Escape with him to the secluded Isla Saona to relax on palm-fringed sandy beaches and snorkel for giant clams in the turquoise water. Experience the Caribbean at its most beautiful and see paradise as it usually remains hidden from tourists; tread new paths like Christopher Columbus.
Jens Kirmse will gladly establish contact with Kenny Santana for you.

Nicaragua "Flores del Cafe" Coffee Women's Fund Projects
"Flores del Café" is produced exclusively by women and remunerated with a premium. The goal of the Women's Fund Project is to provide microcredits to women in Jinotega through its financial support. They can thus acquire land from the cooperative for agricultural projects, such as for cultivating "Flores del Cafe" coffee. This is needed for planting and harvesting the coffee, purchasing machinery, installing irrigation systems – everything required for coffee cultivation. Through these microcredits and the production of coffee, women can contribute equally with their husbands to improving their family's quality of life, strengthening their independence. In the past, loans were denied to women, but land ownership is the key to obtaining microcredits. The aim of the Women's Fund Projects is for these microcredits to initiate a shift in thinking and establish the benefit of female land ownership, as currently only 15% of land is held by women. Traditionally, the father passes land on to the son. Through acquisition by women, the mother can bequeath the cultivated land to her daughters for this exceptional "Flores del Cafe" coffee.
"Flores del Cafe" - A Hand-Crafted Highland Coffee
"Flores del Cafe" is cultivated at an altitude of 1100m to 1400m, a true highland coffee. It is hand-picked with great care. This Arabica coffee is available in the Cattura and Catuai varieties. "Flores del Cafe" captivates with its light acidity and enormous richness of aromas, and is versatile in preparation, whether as espresso or coffee – a true delight. A velvety taste without bitterness characterizes "Flores del Cafe".
Awards from OCIA, BIOLATINA Fairtrade & Rainforest Alliance
The Aldea cooperative produces "Flores del Café" coffee in collaboration with over 1500 small producers and 500 small farmers. The average coffee farm is 3 hectares. For coffee production, Aldea has received certificates from OCIA and BIOLATINA 2011 Fairtrade, Rainforest Alliance, and was awarded the SPP designation, which stands for "Small Roducer’s Symbol". By purchasing "Flores del Cafe" coffee, you directly support the women in Jinotega and actively contribute to improving their quality of life.
Uganda Coffee – Organic Coffee from the „Mountains of the Moon“
The Uganda coffee is an exceptional organic Arabica that not only impresses with its taste but also plays an important social and ecological role. Uganda Wugar Bukonzo originates from the impressive Rwenzori Mountains, the legendary „Mountains of the Moon“, and is cultivated there by smallholder farmers under strict organic standards.
This coffee is a statement: for sustainable enjoyment, for fair trade, and for agriculture in harmony with nature. At the same time, it contributes to strengthening a cooperative that offers new perspectives to hundreds of families in a remote region. Every sip tells of the farmers' courage, their dedication to nature, and a holistic understanding of quality that goes far beyond taste.
Organic Coffee from Uganda: Wugar Bukonzo & the Bukonzo Joint Cooperative Union
The story of this coffee begins in 1999 with the founding of the Bukonzo Joint Cooperative Union. The region in Bukonzo County was historically heavily marked by isolation, poverty, and the consequences of long-standing conflicts. Many farming families lived on the fringes of society, cut off from economic opportunities and without access to fair markets. But instead of resigning themselves, people joined forces to take their destiny into their own hands.
The heart of this project is the conviction that sustainable change can only emerge from within the community. The cooperative not only began to market coffee but also established a revolutionary system of Village Savings and Loans Associations. These microfinance structures enabled the now over 1,700 members – organized in 72 farmer groups – to invest in their own future for the first time.
What makes this background so special is the holistic approach: farmers are not only trained in modern, sustainable cultivation methods but also learn basic business principles. They map their farms, visualize their financial goals, and work together to improve their living standards. When you enjoy this coffee, you support a project that gives a voice to isolated people and creates real opportunities through education, infrastructure, and fair trade. It is a coffee that builds bridges – from the remote slopes of Uganda to your cup here in Germany.
The Uganda Wugar Bukonzo is a prime example of how organic farming and social development can go hand in hand. Organic certified cultivation here means not only refraining from chemical fertilizers and pesticides – it is an expression of a deeply rooted respect for soil, nature, and people.
Uganda Wugar Bukonzo – Organic Highland Coffee from the Rwenzori Mountains
The home of our Uganda Bukonzo resembles an enchanted Garden of Eden. The coffee cherries ripen on the slopes of the Rwenzori Mountains, also poetically known as the „Mountains of the Moon“. This spectacular mountain range on the border with the Democratic Republic of Congo is famous for its snow-capped peaks, mist-shrouded valleys, and breathtaking biodiversity.
At altitudes of 1,400 to 2,100 meters above sea level, the coffee plants find conditions that seem almost perfected for the cultivation of premium Arabica coffees. The terroir is characterized by fertile, volcanic soils, rich in minerals, which give the plants the necessary strength to develop complex flavors.
The climate at this altitude plays a decisive role in the quality of the beans. Temperatures are moderate, and the alternation between sunny days and cool nights significantly slows down the ripening process of the coffee cherries. This „Slow Maturity“ ensures that the bean has more time to store sugars and aromatic oils. The result is a density and a depth of flavor that is sought in vain in coffees from lower altitudes.
The varieties primarily cultivated here are Nyasaland, SL14, and SL28. Especially the SL varieties, originally developed in Kenya, are globally renowned among coffee connoisseurs for their excellent cup quality, their fine acidity, and their pronounced fruit notes. The Nyasaland variety, one of the oldest Arabica types in Africa, often contributes a floral and sweet component.
Cultivation is carried out almost exclusively by smallholder farmers on tiny plots. There are no vast monocultures here. Instead, the coffee grows in harmony with nature, often in the shade of banana plants, fruit trees, or native forest giants. This mixed cultivation not only protects the delicate coffee bushes from the direct equatorial sun but also preserves the region's biodiversity, prevents soil erosion, and ensures a natural balance that renders the use of chemicals unnecessary – a cornerstone for the organic certification of this exceptional coffee.
Some characteristics of the cultivation area:
Rich soils due to volcanic deposits
Natural shade trees that promote biodiversity and aroma development
High rainfall that ensures a continuous supply for the coffee plants
Mountain climate that contributes to pronounced aroma development
This region is one of the most exciting coffee growing regions in East Africa, although it received little attention for a long time. Today, it is regarded as the origin of particularly characterful and aromatically complex coffees.
Care in Every Step: Hand Harvesting and Washed Processing of Uganda Organic Coffee
The journey from the red cherry to the green unroasted bean in Uganda Bukonzo is a process characterized by care and manual labor. As the smallholder farmers' fields are often on steep slopes, the use of machines is impossible. Each individual coffee cherry is therefore selectively hand-picked.
The farmers are extremely selective: only the fully ripe, deep red cherries find their way into the harvest basket. Unripe or overripe fruits, which could mar the taste, are consistently sorted out. This hand harvesting is arduous and requires several passes during the harvest season, but it is the first and most important guarantee for the subsequent quality in the cup.
After harvesting, the cherries are brought to the cooperative's central processing station or processed in the small "Micro-Stations" of the farmer groups. Processing is done by the washed method.
Depulping: First, the pulp is mechanically removed from the beans.
Fermentation: The beans, still covered with remnants of the sweet pectin layer (mucilage), are placed in fermentation tanks. Here they rest for a controlled period (usually 12 to 36 hours, depending on temperature). During this phase, natural enzymes break down the fruit sugars, and the coffee develops its fine, clear acidity.
Washing & Grading: After fermentation, the beans are thoroughly washed with fresh mountain water. Often, they are also sorted by density in washing channels – the heaviest and thus best beans sink.
Drying: Subsequently, the beans are spread out on so-called "African Beds" (raised drying tables). There, they dry gently under the African sun. To ensure uniform drying and prevent mold formation, the coffee is regularly turned by hand.
Finally, a strict sorting by size and quality takes place. Our coffee has the grade Scr. 15 up, meaning that only large, uniformly grown beans are used. This meticulousness in processing ensures an absolutely clean cup profile, free from defects, and allows the character of the terroir to shine unadulterated.
The Flavor Profile is a Spicy Revelation: Apple, Forest Berry, Orange Blossom & Caramel
The Uganda Coffee – Bukonzo Joint Organic is not a quiet one. It brings the full power of the Mountains of the Moon to your cup and surprises with a profile that combines powerful spice with complex fruitiness.
The first impression (aroma): Even when you open the bag or grind the beans fresh, you'll notice: something special is coming. An intense, spicy scent fills the room, immediately accompanied by a fine, elegant note of orange blossom. This floral lightness forms an exciting contrast to the deep sweetness of dark caramel, which forms the base of the aroma.
In the cup (taste): The first sip immediately reveals the character of this coffee: it is powerful and spicy, yet incredibly velvety on the tongue. It fully fills the mouth without appearing bitter. Taste-wise, you experience a fascinating interplay. The warm caramel base is complemented by the clear fruitiness of red apple. But there's more: after a moment, deeper, dark fruit notes unfold, reminiscent of aromatic forest berries. This combination of spice and berry fruit gives the coffee a mysterious depth.
Acidity & Aftertaste: Acidity plays only a gentle supporting role here. Think of the juicy bite of a red apple – invigorating but not sharp. It is wonderfully smoothly integrated and serves to give structure to the aromas. It ensures that the velvety fullness and the rich caramel note do not seem too heavy, but remain vibrant. In the finish, the spicy character lingers, while a hint of sweet orange blossom remains as a subtle memory on the palate.
The Uganda Bukonzo coffee is a discerning „Specialty Coffee“: uncomplicated enough for your daily morning enjoyment, yet complex enough to consciously celebrate it as a specialty. An ideal coffee for those who like it full-bodied and expressive, but don't want to miss out on harmonious fruitiness.
More Than Just Enjoyment: Uganda Coffee - For Equality and Real Opportunities
By purchasing this coffee, you are choosing not only organic quality but a model of hope. The Bukonzo Joint Cooperative is a beacon project for gender equality and economic self-determination in Uganda. That this path is the right one is also confirmed by international experts: for its outstanding commitment, the cooperative was awarded the renowned SCA Sustainability Award 2015.
A central aspect of the cooperative's work is the empowerment of women. In many rural areas of Uganda, coffee cultivation is traditionally a man's affair, although women often do the hard work in the fields. Bukonzo Joint has changed this: here, women are not just laborers, but co-owners and decision-makers. The cooperative's methodology promotes dialogue within families, so that spouses plan and manage their finances together. This has led to a significant reduction in domestic violence and a strengthening of women's roles in the village community.
Furthermore, a portion of the proceeds flows directly into community infrastructure. Roads are improved, schools supported, and healthcare secured. The income from coffee allows farmers to send their children to school and renovate their homes.
You also support ecological sustainability. The farmers of Bukonzo Joint see themselves as guardians of their land. By refraining from pesticides and chemical fertilizers, they protect the water sources of the Rwenzori Mountains and preserve soil fertility for future generations. Every pack of this coffee is thus your direct contribution to:
Fair income for 1,753 smallholder families
Equality and social peace in the region
Environmental protection and preservation of biodiversity in the Rwenzori Mountains
This is what responsibility tastes like at its best: Enjoy the good feeling of becoming part of this great success story with every sip and actively securing the future of the strong women and families in the Mountains of the Moon.
