Become an aroma expert

Want to understand coffee in all its variety, not just drink it? At our weekly Coffee Tasting, known as “Cupping”, we dive deep into the world of aromas. In the heart of the Bavarian Forest, in Zwiesel, you'll learn to judge coffee like a professional.

We'll show you why coffee has more than 800 different aromas and how to taste the subtle differences between origin, roasting and processing.

The world of sensory analysis: more than just caffeine

Before we reach for the spoons, we prepare your senses for the experience. In our roastery gallery you'll learn the theoretical foundations of real coffee enjoyment:

Jens Kirmse talking with guests in the shop of Kaffeerösterei Kirmse

Part 1 of the event

  • Flavour wheel & variety We explain how nuances from fruity and berry-like to nutty and chocolatey develop, and what role terroir (soil and climate) plays in this. More on our blog: The fascination of coffee aromas
  • Recognising quality Learn what sets a specialty coffee apart from commodity coffee and what to look out for when buying coffee for home. More on our blog: What is specialty coffee? · What do SCA, SHG, EP & Co. mean?
  • Cultivation & processing We take a look at the different methods (washed, natural, honey-processed) and their huge influence on the final taste in the cup. More on our blog: The top 10 coffee-growing countries

Cupping: slurping like the professionals

Now it gets practical – and yes, slurping is expressly encouraged here! In classic Cupping, the internationally standardised method of evaluating coffee, we go all in together:

Part 2 of the event

  • The preparation We taste different coffees directly side by side. You'll get to know “breaking the crust” and smelling the wet aromas.
  • The technique We show you the right slurping technique, which sprays the coffee finely across your mouth so that it reaches all your taste buds at once.
  • Comparison & evaluation We compare different highland coffees. Discover your personal preferences and learn to assess acidity, body and sweetness objectively. A moment of pure concentration and enjoyment. More on our blog: Why does coffee taste bitter or sour?
